Carveries are extremely popular and if you do more than just a Sunday roast by providing specials like Pasta Nights, Indian, Chinese, Thai and a whole range of other foods, all of which work really well from a carvery, you can be assured of excellent profit margins from little effort.
If your chef has a night off then you can be sure it is either a Sunday or Monday night because these are traditionally a quiet night. But look around at your competition and you’ll see they are also closed so why not get in there and provide something they don’t offer. How about a “Fill Your Plate” Monday special, have a couple of sizes of plate and let them help themselves - only once mind. They go away happy and you’ve provided economical foods so you’re happy too, plus they’ve had a drink whilst there.
